Duck fat potatoes | Women’s Weekly Food
Get crispy potatoes every time with this easy duck fat roast potato recipe. Unlike ordinary roast potatoes, these are coated in duck fat, making them super crispy on the outside and soft on the inside.

Preheat oven to 200°C (180°C fan-forced).
Place potatoes in a large saucepan of cold salted water; bring to the boil. Simmer, covered, for 8-12 minutes. Drain potatoes in a colander and leave to dry for several minutes.
Melt the duck fat in the pan the potatoes were cooked in. Return the potatoes to the pan. Cover the pan with the lid; shake pan well to rough up the outsides and coat them with the duck fat.
Place the potatoes in a medium roasting pan in a single layer; season well. Roast for 25 minutes. Turn the potatoes; add garlic to pan. Roast for a further 20 minutes or until golden and crunchy.
